The cooking is spot on, as exemplified by the roast monkfish, with its golden exterior and firm, melt-in-the-mouth flesh; the flavour combinations are well balanced and the flavours themselves are bold and highly seasoned, the homemade ketchup or the vanilla cream being a case in point.
